This mornings healthy breakfast was vegetable fritters and eggs. I had some steamed broccoli and cauliflower left from dinner last night so I tried this out.
2 cupped handfuls of steamed cauliflower and broccoli
1 zucchini, grated
tablespoon of flour (i used coconut flour)
sprinkling of grated paremsan cheese
Mash the broccoli and cauliflower until its in small pieces. Mix in the zucchini, egg, flour and cheese. Mix it all into a lumpy batter.
Heat a thin layer of oil in a non-stick pan (dont deep fry them!), throw a dollop of the mixture in the pan and fry until golden on each side.
Serve with some eggs. Some sauteed cheer tomatoes and spinach would go lovely with this too. I would have had a few slices of bacon too except I am going for a dirty cheat meal later today so keeping all the other meals light and clean. Its all about balance.
