This is a nice and healthy weekend treat breakfast. Great for after an early morning workout.
Ingredients:
(Serves 2)
a good handful of cooked sweet potato cut into cubes(I didn't weigh or measure this). It can be streamed, roasted, whatever you like
2 eggs
dash of cinnamon (i like quite a bit of cinnamon so I put in more like a teaspoon)
milk or natural yogurt
Bacon and eggs to serve
Small bit of maple syrup
Directions:
put the sweet potato, eggs, cinnamon, and a splash of milk/yogurt in a blender. Mix it up into a fairly thick batter. Add in some more milk/yogurt if its too thick. Or a bit of coconut flour/almond meal if its too watery. Heat some olive oil or coconut oil in a non stick pan. Pour the mixture on in small circles. After 2-3 mins they will set and you can flip them over and cook for another 2-3mins.
Serve with some bacon & scrambled eggs with a small bit of maple syrup(don't go crazy with this stuff) drizzled over. Delish!
